These Green Bean Fries are a delicious way to get in a serving of vegetables!
They can be made in the air fryer or baked in the oven. Both ways are very easy. The air fryer just takes a little less time.
Since these Green Bean Fries aren’t fried in oil they’re practically guilt free!

Each serving for blue and purple is 2 points, green is 3 points. You can serve them with your favorite dipping sauce or eat them on their own.

Making the Green Bean Fries is pretty easy. I started out by trimming my fresh green beans.
I whisked 2 eggs in a bowl and set that aside.
In a separate bowl I mixed together Panko breadcrumbs, Italian breadcrumbs, garlic powder, onion powder and salt.
You want to make sure the bowls you use are good for dipping the green beans into.
Some of my green beans were pretty long. You can leave them as is or break them in half. It’s up to you and the size of your bowls.
Next you want to line a baking sheet with parchment paper or aluminum foil. Even if you’re using an air fryer vs. baking them you’ll still want to set them on the baking sheet. 1 lb. of green beans is quite a bit.
I set up my little station with the green beans to the left, then the eggs, the breadcrumb mixture followed by the baking sheet.
You’ll want to take a green bean, dip it in the egg, then drop it into the breadcrumbs making sure to cover it completely. Then set it on the baking sheet.
Feel free to do more than one green bean at a time, just make sure each one gets coated in the breadcrumbs.
If you’re making these green beans in the air fryer you’ll want to add them to the basket in a single layer (you might have to do more than one batch) and spray them with olive oil spray.
Set the air fryer to 400 degrees for 5 minutes. You’ll want to flip the green beans half way through and spray again with olive oil spray.

If you’re baking the green beans in the oven you can just leave them on the baking sheet and spray them with olive oil spray. Bake in the oven at 400 degrees for 10 minutes, flipping the green beans halfway through and spraying again with olive oil spray.
That’s all there is to it! They taste best when served warm.

- 1 lb. fresh green beans, washed and trimmed
- 2 eggs, whisked
- 1/2 cup Panko breadcrumbs
- 1/2 cup Italian breadcrumbs
- 1/2 teaspoon garlic powder

Set up the assembly line – green beans to the left, then the eggs, breadcrumb mixture and baking sheet.

Dip the green beans into the egg, followed by the breadcrumb mixture, then place onto the baking sheet. Repeat until all of the green beans are used.

Place the green beans into the air fryer in a single layer (you might have to do more than one batch). Spray with olive oil spray and cook at 400 degrees for 5 minutes. Turn the green beans half way through and spray again with olive oil spray. Serve immediately.
