This Thai Cucumber Salad is a delicious side dish! Full of flavor and easy to make.
It’s only 1 point per serving for blue, green and purple.

Here’s what you need to make Thai Cucumber Salad:
- Cucumbers
- Red onion
- Apple cider vinegar
- Sesame oil
- Sugar
- Red pepper flakes

I used English cucumbers for this recipe. I like them because the skin is thin and there’s not as many seeds.
Only two of the ingredients in this Thai Cucumber Salad have points, the sesame oil and sugar.
One teaspoon of sesame oil is 1 point and one teaspoon of sugar is 1 point.
The whole cucumber salad is only 2 points. I broke it into four servings but you could also do two large servings.
You can eat this with pretty much anything but I like serving it with chicken or steak.
All you have to do for this recipe is cut up the cucumber and red onion, then mix all of the ingredients together in a bowl. That’s it!

If you don’t like spicy food you can omit the red pepper flakes.
This Thai Cucumber Salad is perfect for those hot summer days!
I don’t know about you but when it’s 90 degrees outside I don’t want to turn on my oven.

Yield: 2-4 servings (1 point per serving for blue, green and purple)
- 2 English cucumbers
- 1/4 red onion
- 2 tablespoons apple cider vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- Pinch of red pepper flakes

Cut the cucumber into slices and them to a mixing bowl.

Slice or chop the red onion and add it to the cucumber.

Add the apple cider vinegar, sesame oil, sugar and red pepper flakes then mix together. Serve immediately or refrigerate until you're ready to eat it.
