This Summer Veggie Pizza is delicious and only 4 points per serving for blue, green and purple!
Pizza is a go-to for me when I don’t know what to make. There’s so many delicious creations you can come up with.
I love this Cheeseburger Pizza, Thai Pizza and Chicken Bacon Ranch Pizza. They’re all delicious and low in points.

For my Summer Veggie Pizza I made a creamy sauce that is flavored with garlic. It turned out really good.
I used fat free half and half, flour, garlic and salt. I added the half and half to a saucepan, whisked in the flour and added the garlic powder and salt. Let it cook for about 5 minutes or until the sauce thickens.
It’s so quick and easy to make I just do it while the oven is preheating for the pizza.
The dough I bought was a Pillsbury thin crust pizza. In the app it says it’s 5 points for 1/5 of the dough. Make sure you change it to 5 servings of the dough which is 24 points.
It may seem like a lot of points but there are actually 12 servings so it’s only 2 points for each serving of the pizza dough.
For the summer veggies I used zucchini and yellow squash, but you can use any vegetables you want.
Tomatoes, eggplant and peppers would taste great too!
If you buy the Pillsbury thin crust pizza dough you have to prebake the crust for 6 minutes before adding the toppings.
While my dough was cooking I sliced up the squash, zucchini and red onion.
Once I pulled the dough out of the oven I spread the sauce over the pizza, then the cheese and finally the squash, zucchini and red onion.
Let the pizza cook 6-8 more minutes and it’s done!
It’s a delicious recipe that’s easy to make.

Yield: 12 servings (4 points per serving for blue, green and purple)
- 1 Pillsbury thin crust pizza dough
- 1/2 cup fat-free half and half
- 1 tablespoon flour
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
- 1 1/2 cups part-skim mozzarella cheese, shredded
- 1/2 yellow squash
- 1/2 zucchini
- 1/4 red onion

Preheat oven according to the directions on the pizza dough.

In a small saucepan add the half and half and whisk in the flour. Stir in the garlic powder and salt. Cook over a medium-low heat until it starts to simmer and thicken, then remove from heat.

Lay the pizza dough out on a baking sheet and bake for 6 minutes.

Slice the zucchini, squash and red onion.

After the dough has prebaked evenly spread the sauce on top. Then add the cheese, zucchini, squash and red onion.

Bake 6-8 more minutes, until the cheese is melted and the crust is golden.
