Twice Baked Taco Potatoes are an easy meal your family will love! Top them with your favorite taco toppings for a delicious dinner.
I love twice baked potatoes and I love tacos, so I figured why not combine them!?

How to make Twice Baked Taco Potatoes:
The first thing you want to do is bake the potatoes. I pierced my potatoes with a fork then put them in the oven for 1 hour at 400 degrees. I used russet potatoes.
You can always prepare the potatoes ahead of time, just keep them in the fridge until you are ready to use them.
While the potatoes were baking I started getting the taco meat ready. I used 96% lean ground beef to help keep it low in points.
I browned the taco meat then added taco seasoning, water and tomato sauce. Let that simmer for 5 minutes.
Once the potatoes are cooked cut them in half and scoop out the potato, leaving the potato shell.
Put the potatoes in a large bowl, add the milk then mash them. Stir in the taco meat and half of the cheddar cheese.
Spoon the mixture into the potato shells and bake for 20-25 minutes.
These can be made ahead of time and kept in the fridge. Just add 5-10 extra minutes in the oven.
Now the fun part, adding your toppings! You can add sour cream, green onions, tomatoes, cilantro or guacamole. Any of your favorite taco toppings!

- 2 medium russet potatoes
- 1/4 cup skim milk
- 8 oz. Laura's lean ground beef
- 1/2 oz taco seasoning
- 2 tablespoon water
- 1/4 cup tomato sauce
- 1/2 cup reduced fat sharp cheddar cheese, divided
- Salt, to taste

Preheat oven to 400 degrees F. Pierce the potatoes with a fork then bake them for 1 hour.

Brown and drain the ground beef. Add the taco seasoning, water and tomato sauce. Simmer for 5 minutes.

Slice the potatoes in half. Scoop out the potato and add it to a large bowl. Add milk and salt to the potatoes and mash. Add the taco meat and 1/4 cup of the cheese and stir together.

Place the potato shells on a baking sheet. Add the potato mixture to the shells then top with the remaining cheese.

Bake 20-25 minutes. Top with your favorite taco toppings.
