Twice Baked Taco Potatoes

Ingredients

  • 2 medium russet potatoes
  • 1/4 cup skim milk
  • 8 oz. Laura's lean ground beef
  • 1/2 oz taco seasoning
  • 2 tablespoon water
  • 1/4 cup tomato sauce
  • 1/2 cup reduced fat sharp cheddar cheese, divided
  • Salt, to taste

Instructions

  • Preheat oven to 400 degrees F. Pierce the potatoes with a fork then bake them for 1 hour.
  • Brown and drain the ground beef. Add the taco seasoning, water and tomato sauce. Simmer for 5 minutes.
  • Slice the potatoes in half. Scoop out the potato and add it to a large bowl. Add milk and salt to the potatoes and mash. Add the taco meat and 1/4 cup of the cheese and stir together.
  • Place the potato shells on a baking sheet. Add the potato mixture to the shells then top with the remaining cheese.
  • Bake 20-25 minutes. Top with your favorite taco toppings.
