It only takes a few ingredients and less than 30 minutes to make this Cheesy Taco Pasta!
I used boneless, skinless chicken breast instead of using ground beef. That saved a ton of points!
To save time I bought a rotisserie chicken that was already cooked. I love recipes when I can do that.

This is all you need to make this recipe:
- Cooked chicken breast
- Salsa
- Taco seasoning
- Reduced-fat Mexican cheese, shredded
- Pasta (I used rotini)
That’s it! I also like to add cilantro and sour cream, but that’s optional.
The recipe makes 8 (1 cup) servings. It’s 4 points per serving for blue and purple, 5 points per serving for green.

Even if you want to have two servings it’s only 8 points for blue and purple, 10 points for green. That’s not bad for a filling dinner.
This Cheesy Taco Pasta is ready in less than 30 minutes! I started by cooking the noodles.
While those were cooking I started shredding the chicken breast.
Once the noodles were draining I added taco seasoning and water to the empty noodle pan.
I mixed that up then added the chicken to the pan. I gave it a good stir, then added the salsa.
Next I added the noodles back to the pan. I kept the heat on low, then added the cheese.
Once the cheese was melted it was ready to eat!

- 8 oz. Rotini pasta
- 2 cups boneless, skinless chicken breast, cooked
- 1 tablespoon taco seasoning
- 1 tablespoon water
- 1 1/2 cups salsa
- 1 cup reduced-fat Mexican cheese, shredded
- Cilantro
- Sour cream

Cook and drain the pasta according to the directions on the box.

Add taco seasoning and water to an empty pan. Mix together, then add the chicken.

Turn the heat to low then add the salsa to the pan, stir, then add the pasta. Add the cheese and stir until melted.
