Roasted Zucchini is a great side dish that’s also low in points!
It’s almost the end of summer which also means the end of fresh fruits and vegetables grown at home. Zucchini and squash is one of those fruits!
I tend to treat zucchini and squash as more of a vegetable, but technically it’s a fruit.

Either way this is a great option for a zucchini recipe!
Turning fresh vegetables into roasted vegetables is easy to do and low in points. Instead of using olive oil I use olive oil spray to save points.
I love Parmesan cheese with zucchini. I used 1/4 cup of shredded Parmesan cheese which was 3 points. The only points in this recipe come from the Parmesan cheese.
I used one medium zucchini and one yellow squash that I cut into 1/4 inch rounds. Both of those were 0 points with Weight Watchers blue, green and purple plans.
Once the zucchini was cut up I added it to a large bowl. I sprayed it with olive oil spray then added garlic powder, salt and black pepper.

Make sure to mix it all together really well. You want to make sure all of the zucchini gets coated in the oil spray and seasonings.
Spray a sheet pan with cooking spray and add the zucchini in a single layer. Then you want to top the zucchini with shredded Parmesan cheese.

It only takes 10 minutes in the oven then your zucchini is ready! Prep time for this recipe is about 5 minutes making this an easy 15 minute meal.
You can also make this in the air fryer. Just set it to 400 and cook the zucchini for 5 minutes. Make sure the zucchini is in a single layer in the air fryer basket.
Now for the Weight Watchers points. For the green plan, blue plan and purple plan it’s only 1 point per serving.

Yield: 3 servings (1 point per serving for blue, green and purple)
- 1 medium zucchini
- 1 medium yellow squash
- Olive oil cooking spray
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Parmesan cheese, shredded

Preheat oven to 400 degrees F.

Cut the zucchini and squash into 1/4 inch rounds. Add them to a large bowl. Spray with olive oil cooking spray then add the garlic powder, salt and pepper. Mix together making sure to coat all of the zucchini.

Spray a sheet pan with cooking spray. Add the zucchini in a single layer then top with Parmesan cheese.

Cook for 10 minutes then serve.
