Ranch Smashed Potatoes

Ingredients

  • 1.5 pounds baby potatoes (gold or red)
  • 1 tablespoon ranch seasoning mix
  • Olive oil spray
  • Salt and black pepper, to taste

Instructions

  • Boil the potatoes 20 minutes or until you can easily pierce them with a fork.
  • Drain the potatoes. Spray a baking sheet with olive oil spray and evenly space out the potatoes.
  • Use a potato masher or the bottom of a glass to smash the potatoes. Sprinkle the top of each potato with ranch then spray with olive oil.
  • Bake at 425 degrees for 20 minutes or until the edges are crispy.
