I am in love with this Pink Lemonade No Bake Cheesecake!
Not only is it delicious but it’s also easy to make.
Since you don’t have to bake it it’s ready in no time at all!

This kind of reminds me of key lime pie, but lemon flavored. It’s as if they could be cousins. 🙂
I always have the Crystal Light pink lemonade packets on hand for water. So I thought why not try to make a cheesecake out of it?
Since I didn’t want to add the powder directly to the cream cheese I mixed together 1 teaspoon of Crystal Light pink lemonade powder with 2 teaspoons of water.
It worked great! There was no powder taste to the cream cheese.
To lighten up the cheesecake itself I used reduced fat cream cheese instead of regular cream cheese.
For the crust I used graham crackers but I left out the butter.
When I created this recipe in the WW app I set it at 12 servings. That makes it 4 points per serving for blue, green and purple.
You can always play around with the serving size if you want larger or smaller portions.
Desserts like this I like to use small dessert cups. They’re perfect for portion control and they look so cute!
I topped my no bake cheesecakes with some fat-free whipped cream and a lemon slice but that’s optional.
You can serve it right away or leave it in the fridge until you’re ready.

Yield: 12 servings (4 points per serving for blue, green and purple)
- 8 oz. reduced fat cream cheese (room temperature)
- 1 teaspoon Crystal Light pink lemonade
- 2 teaspoons water
- 8 oz. fat free Cool Whip
- 4 graham cracker sheets
- Optional: 2 drops of red food coloring

Add the cream cheese to a mixing bowl.

In a small bowl mix together the pink lemonade powder and water. Then add it to the cream cheese. If you're adding the food coloring add it to the cream cheese now.

Use a hand held mixer on medium to mix together the cream cheese and pink lemonade, until it is a solid pink color.

Fold in the Cool Whip. Be careful not to over mix it.

Add the graham crackers to a zip up bag. Use a meat mallet or rolling pin to turn the graham crackers into crumbs.

Divide the graham crackers into 12 small dessert cups, then divide the cream cheese mixture into the cups.
