This Corn Salsa is delicious with steak, chicken or fish! And it’s 0 points for blue and purple.
If you follow green it’s 3 points per serving, that’s because the corn isn’t 0 points.
With summer right around the corner this is sure to be one of your favorites!

Corn salsa also tastes great with some low point tortilla chips.
I used corn on the cob for this recipe, which I recommend. If you’re really in a hurry you could use frozen corn, but the fresh corn gives it such a great taste.
You want to cook the corn for 4-5 minutes then take it out of the boiling water to cool.
Another option is to grill the corn, that’ll give it some extra flavor.
Once you can handle the corn use a knife to cut it off the cob.
After the corn is cooked you just need to chop up the other vegetables.
I used one red pepper, 2 tablespoons of chopped red onions, cilantro and one jalapeno.
If you like really spicy food you can leave the seeds in, I removed them.
Add everything to a mixing bowl. Then I added the juice from one lime, garlic, chili powder, salt and pepper.
Stir everything together and it’s ready to eat! It’s that easy.
You can also keep it in the fridge for a couple of days, just give it a good stir before you eat it.

Yield: 4 servings (0 points per serving for blue and purple, 3 points per serving for green)
- 4 ears of corn
- 1 red pepper, chopped
- 2 tablespoons red onion, chopped
- 1 jalapeno, chopped
- 3 tablespoons cilantro, chopped
- 1 clove garlic, minced
- Juice from one lime
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon chili powder

Bring a pot of water to a boil. Add the corn and cook 4-5 minutes.

Remove the corn from the water and let it cool. Once you can handle the corn use a knife to cut off all of the kernels. Add it to a mixing bowl.

To the mixing bowl add the red pepper, red onion, jalapeno, cilantro and garlic. Stir together then add the lime juice, salt, pepper and chili powder. Mix together and serve.
