I found another way to use my mini waffle maker – making ice cream tacos!

These ice cream tacos aren’t just a delicious dessert, they’re also kid friendly. My girls loved them!
I used the chocolate chip Kodiak Cakes waffle mix. I mixed together 1 cup of the waffle mix with 1 cup of water.

The directions on the box say to also add 1 tablespoon of oil. To lighten it up I reduced it to 1 teaspoon. They still tasted great!
I was able to make 8 waffles with the batter. When the waffle is done in the waffle maker I carefully folded it in half and let it cool.
To fill the tacos I used Halo Top vanilla bean ice cream. I used 3/4 cup which was 4 points.
For half of the tacos I used Hershey’s sugar free chocolate syrup. The other half I used Smucker’s sugar free caramel syrup.
You don’t need a lot of either syrup, I used 1 tablespoon of each. The chocolate syrup is 0 points and the caramel syrup is 1 point.
Fat free whipped cream is another great topping. I used 4 tablespoons which was 0 points.
Maraschino cherries are another good idea. You can have 1 for 0 points. If you have 2 it will cost you 1 point.
You could also add chopped peanuts. That’s what I love about these ice cream tacos, there’s so many different things you can add to them!
Just make sure to doublecheck the points of your tacos if you use different ingredients.


Yield: 8 (one taco is 2 points for blue, green and purple, two tacos is 5 points for blue, green and purple)
- 1 cup chocolate chip Kodiak Cakes waffle mix
- 1 cup water
- 1 teaspoon vegetable oil
- 3/4 cup Halo Top vanilla bean ice cream
- 1 tablespoon Hershey's sugar free chocolate syrup
- 1 tablespoon Smucker's sugar free caramel syrup
- 4 tablespoons fat free whipped cream

Add the chocolate chip Kodiak Cakes waffle mix, water and vegetable oil to a mixing bowl. Whisk together.

Pre-heat the mini waffle maker. Spray with cooking spray and add a little less than 1/4 cup of the batter.

Once the waffle maker starts steaming remove the waffle and carefully bend it in half. Let it cool. Repeat with the remaining waffle batter.

Fill each taco with ice cream, syrup and whipped cream. Optional: add sprinkles.
