This Lemon Garlic Couscous is a delicious side dish that’s low in points!
You can have 1/2 cup for 3 points with blue, green and purple.
It’s the perfect side dish for any type of meat or fish. It’s also great with vegetables.

Couscous is actually a tiny pasta, not a whole grain. I used Moroccan couscous for this recipe. It’s the most common type of couscous found at the grocery store.
It’s really small and cooks fast. This Lemon Garlic Couscous took about 10 minutes to make. That includes prep and cook time.
You could even add some chicken and Parmesan cheese to it and make it a meal!
This is all you need for this recipe:
- Butter
- Garlic
- Chicken broth
- Fresh lemon juice
- Salt
- Parsley
- Couscous
Most of the ingredients are things I always have on hand.
To make the couscous I started by melting the butter in a pan then adding the minced garlic. I let that cook for about 30 seconds.
Next I added the chicken broth, lemon juice, salt and parsley. I brought it to a boil then stirred in the couscous.
Put a lid on the pan and remove it from the heat. Let it sit for 5 minutes then fluff it with a fork. That’s it! It’s one of the easiest recipes you will ever make.

Yield: 6 servings (3 points per serving for blue, green and purple. Each serving is approximately 1/2 cup.)
- 1 teaspoon butter
- 1 clove garlic, minced
- 1 1/4 cups chicken broth
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1 teaspoon dried parsley
- 1 cup couscous
