This Neapolitan Bundt Cake is fun to make and only 3 points per serving for blue, green and purple!
I used the Pillsbury sugar free yellow cake mix. Instead of using eggs and oil I used Sprite Zero.
You could also use Diet 7UP if you don’t have Sprite Zero.

If you haven’t made a cake with soda before it’s awesome! The most common question I get asked is if you also use the eggs and oil. No, you don’t.
I’ve also been asked why you don’t use the eggs if they’re zero points for blue and purple. The easiest answer is that you don’t need to.
I don’t know why using soda in place of eggs and oil works, but it does!
To make this Neapolitan Bundt Cake I started by whisking together the cake mix and Sprite Zero.
Once that was mixed thoroughly I split the batter into three bowls. I didn’t measure it I just kind of eyeballed it.
To make the chocolate cake I added 2 teaspoons of cocoa powder to one of the bowls, then mixed it together.
For the strawberry cake I used strawberry extract. Since strawberry extract is clear I added red food coloring. That’s optional and up to you.
The third cake bowl just stays as is.
Spray your bundt pan with cooking spray then start scooping in the batters.

There’s really no rhyme or reason to it, just do whatever you think looks good.
I let the cake bake for 38 minutes then let it cool. I topped it with Hershey’s sugar free chocolate syrup.
It also tastes great with fat free whipped cream.
If you have a sweet tooth this is the perfect low point dessert! I broke it down to 12 servings which is 3 points per serving for blue, green and purple.

Yield: 12 servings (3 points per serving for blue, green and purple)
- 1 box Pillsbury sugar free classic yellow mix
- 12 oz. Sprite Zero or Diet 7UP
- 1/4 teaspoon strawberry extract
- Red food coloring (optional)
- 2 teaspoons unsweetened cocoa powder
- 6 tablespoons Hershey's sugar free chocolate syrup
- Fat free whipped cream (optional)

Preheat oven according to the directions on the box.

Add the cake mix to a mixing bowl, then add the Sprite Zero. Whisk together for 2 minutes.

Split the batter evenly into 3 different bowls.

Add the cocoa powder to one of the bowls and mix together.

Add the strawberry extract and red food coloring to another bowl and mix together.

Spray a bundt pan with cooking spray. Start scooping in the batter. I did three scoops of the yellow cake, three scoops of cocoa then three scoops of strawberry. I continued doing that until the batter was gone.

Bake for 38 minutes or until a toothpick inserted in the cake comes out clean.

Let the cake cook then add the Hershey's syrup.
