Chocolate Cake with Cream Cheese Frosting

If you have a sweet tooth you’re going to love this chocolate cake!

It’s perfect for the holidays or a small party. Nobody will even know it’s WW friendly!

I think a meal at the holidays isn’t complete without dessert. For Thanksgiving it’s always pie, but for Christmas anything goes!

To make it festive I added little pieces of broken candy cane, but that’s totally optional.

For the chocolate cake and cream cheese frosting it is 5 points per serving. That’s for blue, green and purple!

I bought Pillsbury sugar-free classic yellow cake mix for this recipe. I’ve never seen sugar-free chocolate cake so I figured I would make my own.

All I had to do to make the cake chocolate was add cocoa powder. Four tablespoons gave the cake a delicious chocolate flavor.

Most of my cake recipes are made the same way. Instead of using eggs or oil I use diet soda. I use different flavors for different cakes.

This cake I decided to use Diet Coke. I mixed the cake mix with 12 oz. of Diet Coke and used a hand mixer for 2 minutes on medium.

After the 2 minutes I poured the batter into a 9×13 baking pan that I sprayed with cooking spray.

I baked the cake for 34 minutes then let it cool completely before I frosted it.

The frosting is very easy to make. I used 8 ounces of 1/3 fat Philadelphia cream cheese, 1 cup of powdered sugar and 1/2 teaspoon of vanilla extract.

Once again I used the hand mixer for the frosting. Once it was mixed together I spread it onto the cake.

You can serve it as-is or you can add sprinkles or candy canes, anything you like! Just be sure to add extra points if you do.

Yield: 18 servings – 5 points per serving for blue, green and purple

Ingredients
  • 1 box Pillsbury sugar free classic yellow cake mix
  • 4 tablespoons unsweetened cocoa powder
  • 12 oz. Diet Coke
  • 8 oz. Philadelphia 1/3 less fat cream cheese
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
Instructions
  1. Preheat oven to 325 degrees F.

  2. Add the cake mix, cocoa powder and Diet Coke to a mixing bowl. Use a hand mixer on medium for 2 minutes.

  3. Spray a 9×13 baking pan with cooking spray. Add the cake batter and bake for 34-38 minutes.

  4. Let the cake cool completely.

  5. Add the cream cheese, powdered sugar and vanilla extract to a mixing bowl. Use a hand mixer to combine.

  6. Spread evenly over the cake.
