I love crepes! I have multiple recipes for crepes on my website and now I can add chocolate crepes to the list.

There is so much you can do with crepes. Plus they’re great for dessert or breakfast!

I love these chocolate crepes with whipped cream and strawberries. It’s delicious.

Crepes are also kid friendly. My kids love it when I say I’m making crepes.

Today was a real exciting day for me and my kids. We’ve been wanting to adopt a dog for a while now and it finally happened!

He’s definitely a senior dog. They estimated his age to be 10 years old. He is just the sweetest boy and I’m happy he has a home to live out his last few years.

I knew I wanted to adopt an older dog, but I was thinking 7 or 8 years old. Once we met him we knew he was perfect. He likes to sleep and cuddle which are two of my favorite things. 🙂

Chocolate Crepes

Yield: 12 crepes (2 crepes = 5 points for blue, green and purple)1

Ingredients
  • 1 cup all-purpose flour
  • 1 1/2 cups skim milk
  • 2 eggs
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1 tablespoon sugar
Instructions
  1. Combine all of the ingredients in a blender. Blend until the batter is smooth.

  2. Let the batter rest for 30 minutes.

  3. Preheat an 8" non-stick skillet on medium-low for 5 minutes.

  4. Spray pan with non-stick cooking spray and add 1/4 cup of batter. Quickly turn the pan in all directions so the batter covers the entire pan.

  5. Let cook for about one minute. Use a rubber spatula to lift up the edge of the crepe and check if the bottom is cooked. Flip over the crepe and let it cook another 20 seconds, or until done.
