I’ve said a million times that I love soup! Fire roasted tomato soup is one of my favorites. I like it so much that it was the inspiration for this tomato basil chicken.
Adding chicken made it even more filling. Plus it’s an easy slow cooker meal. AND it’s low in points!! We’re talking 1 point per serving for blue and purple, 3 points for green.
This tomato basil chicken tastes great over noodles, rice or riced cauliflower.

The points for this recipe do not include the pasta or rice. If you choose to pair it with one of those you will have to add the additional points.
If you’re trying to keep it really low in points riced cauliflower would be the way to go since it’s 0 points.
I made this in the slow cooker which made it super easy. Plus I was in heaven smelling it cook.
To make this tomato basil chicken I started by adding fire roasted tomatoes, tomato sauce, garlic, onion powder, salt and pepper right to the slow cooker.
I stirred it all together then added the chicken breasts. I tucked the chicken breasts under the tomato mixture, added chopped fresh basil, covered it and cooked it on low for 4 hours.
Once it was done cooking I removed the chicken breasts then added the cream cheese.
The tomato mixture was still really hot so I whisked the cream cheese and it melted pretty fast.
After that I added the chicken back in and it was ready to serve.
I added my chicken to 1/2 cup of spaghetti. It was 3 additional points for the spaghetti so all together my meal was 4 points. That’s it!

Yield: 4 servings (1 point per serving for blue and purple, 3 points for green)
- 14 1/2 oz. fire roasted diced tomatoes
- 8 oz. tomato sauce
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon fresh basil, chopped
- 4 boneless, skinless chicken breasts
- 2 tablespoons reduced fat cream cheese

Add the fire roasted tomatoes, tomato sauce, garlic, onion powder, salt and pepper to a slow cooker and stir together. Add the chicken breasts and cover with the tomato mixture.

Add the fresh basil. Cover the slow cooker and cook on low 4 hours.

Remove the chicken breasts then add the cream cheese. Whisk together until the cream cheese melts. Add the chicken back in.

Serve over noodles, rice or riced cauliflower. Add additional points if you use noodles or rice.
