This Blueberry Cobbler is a delicious, low point dessert!

A cobbler is basically a fruit filling that’s topped with either a batter, biscuit, or dumpling and then baked. It’s pretty easy to make a cobbler low in points.

This Blueberry Cobbler is ready in 30 minutes. That includes prep and bake time. It’s that easy!
For the blueberry filling I used 2 cups of blueberries, sugar, flour and cornstarch.
I mixed it all together in a bowl then put it in an 8×8 baking dish.
To make the biscuit/batter part I decided to use Bisquick Heart Smart. I mixed it with skim milk, sugar and a little bit of cinnamon.
Once the batter was mixed together I shaped it into 6 biscuits and put it on top of the blueberries.
It only takes 20 minutes to bake. When I took it out of the oven I used a fork to break up some of the blueberries.
You can eat this Blueberry Cobbler as is (which is delicious) or you can top it with fat free whipped cream or a low point vanilla ice cream.
However you choose to eat it you won’t be disappointed!

Yield: 6 servings (4 points per serving for blue, green and purple)

- 2 cups blueberries
- 2 tablespoons sugar, divided
- 1 tablespoon flour
- 1 teaspoon cornstarch
- 1 cup Bisquick Heart Smart
- 1/3 cup skim milk
- 1/8 teaspoon cinnamon

Preheat oven to 400 degrees F.

In a medium mixing bowl add the blueberries, 1 tablespoon of sugar, flour and cornstarch.

Spray an 8×8 pan with cooking spray and add the blueberry mixture.

In a separate mixing bowl add the Bisquick, milk, 1 tablespoon of sugar and cinnamon and mix together.

Form into 6 biscuits and put on top of the blueberries. Bake for 20 minutes.

Once it's out of the oven use a fork to break up the blueberries.

Hi Laura, I just joined your site…I also just joined WW and am hopeful. I have pinned so many of your desserts to start, fearing I may die without them 🙂 I am admiring all of your desserts using the cake mix and soda and wonder: since eggs are free why not include them with the diet soda? Would it add fluffiness etc? Thank you so much for all of your recipes and efforts. I could not manage this (blue) program without all of the great pinterest posts from people such as yourself. I also could not do this without some of the zero foods!!
Thank you for the nice message! 🙂 As far as the eggs in the cake – you really don’t need it. Adding just the diet soda makes it tastes exactly like regular cake! I don’t know how it works, but it works. The first time I made it I had my kids try it to see if they could tell a difference and they had no idea it was made with diet soda.
