If you like avocado toast, you’re going to love this sandwich!
It has delicious avocado, crispy bread, and cheese.

I love that this sandwich is easy to make and very filling.
How I kept it low in points:
The bread that I use is only 1 point per slice. It’s Aunt Millie’s Live Carb Smart white bread.
I used my food scale to weigh the avocado. I used 2 ounces of avocado which was only 2 points. It may not seem like a lot but it was enough for 2 sandwiches.
For the cheese, I went with Sargento ultra-thin provolone slices. They also have Swiss and cheddar, you can use whatever you prefer.
Instead of using butter on the bread, I sprayed a nonstick pan with olive oil spray. The bread still gets crispy, and it saves a lot of points.

How to make a Grilled Cheese with Avocado:
I started by getting the avocado ready. First I weighed the avocado on my food scale and added it to a small mixing bowl.
Squeeze 1/4 of a lime into the avocado. Add a pinch of garlic powder and salt, then mix together.
Add 1 tablespoon of chopped red onion and cilantro, then stir together.
Cut the tomato slices and set them aside.
Preheat a nonstick frying pan over medium-low heat.
Put 1/2 of the avocado mixture on one slice of bread.
Spray olive oil in the pan and add the piece of bread with avocado, avocado side up.
Top the avocado with the tomato, and cheese, then top with the other slice of bread.
Let the sandwich cook for 3 minutes on each side, or until the bread is golden and crispy.
It’s that easy!

Yield: 2 sandwiches

- 2 ounces avocado

- 4 slices Aunt Millie's Live Carb Smart white bread (or any other bread that is 1 point per slice)
- 2 slices Sargento ultra thin provolone cheese
- Tomato slices
- Olive oil spray

Mix in the red onion and cilantro.

Spread half of the avocado mixture on one slice of bread. Spray the pan with olive oil spray and add the bread avocado side up. Top the avocado with tomato, cheese and a second piece of bread.

Cook for 3 minutes on each side, or until the bread is golden and crispy.

Repeat the steps to make the second sandwich.
