This gourmet grilled cheese sandwich is loaded with cheese, chicken and spinach!
Not only is it delicious but it is also filling. Only 4 points for blue and purple, 7 points for green.
To keep it low in points I used Sara Lee 45 calorie bread. There are a couple of different types to choose from, this time I bought the delightful white.
There’s also whole wheat and multi-grain. I’ve had them all and I think they’re all good.

Most of the time I use the Sargento ultra thin cheese because it’s only 1 point for a slice.
This time I used regular Sargento mozzarella slices. It was 2 points for a slice but I wanted the sandwich to be more cheesy.
If you’re on blue or purple all of the points of the sandwich come from the bread and cheese. Of course if you use a different brand of bread or cheese you will want to doublecheck the points.
The only difference with purple is you have to count the points for the chicken.
For the chicken I seasoned it with garlic powder, salt and pepper. I cooked it in a non-stick pan but you could also bake it in the oven or throw it on the grill.
You want to make sure to season the chicken breast really well since it’s the only seasoning you’ll be using for the sandwich.
Instead of using butter on the bread I used I Can’t Believe It’s Not Butter spray. I did about 10 sprays (half on one side of each slice). It’s zero points for that amount of the spray.
A lot of the points from a regular grilled cheese sandwich come from buttering the bread. With this sandwich it’s zero points!
The recipe is only for one sandwich but it can easily be doubled.

Yield: 1 sandwich (4 points for blue and purple, 7 points for green)
- 1 cooked chicken breast (seasoned with garlic powder, salt and pepper)
- 2 slices 45 calorie Sara Lee bread
- 1 slice Sargento mozzarella cheese
- 1/4 cup baby spinach
- I Can't Believe It's Not Butter, spray

On one side of each slice of bread spray 5 times with the butter spray.

Lay the chicken on a slice of bread followed by the spinach then cheese.

Cook in a frying pan on low/medium for about 3 minutes on each side or until the bread is toasted golden brown.
