This Chicken Fried Steak is lightened up but still delicious!

Plus it only takes a few ingredients to make this quick and easy dinner.
What you need to make Chicken Fried Steak:
- Cube steak
- Extra virgin olive oil
- All purpose flour
- Eggs
- Skim milk
- Cornstarch
- Garlic powder, onion powder, salt and black pepper
Instead of using heavy cream I used skim milk for the gravy. I used a little bit of cornstarch to help thicken it up.
How to make Chicken Fried Steak:
I started by whisking the eggs in a shallow dish. In another dish I added the flour, garlic powder, onion powder, salt and pepper.
Preheat a nonstick skillet over medium heat.
Cut the cube steak into four equal size pieces. Dredge the steak in the flour mixture, then the egg, then back into the flour.
Once all four pieces are coated with flour add them to the pan.
Cook for 3-4 minutes on both sides.
Remove the steaks from the pan and remove most of the grease. Add the skim milk to the pan.
In a small bowl add the cornstarch and mix it with a little bit of water. Slowly whisk the cornstarch mixture in with the milk.
Add some salt and pepper, then let the mixture simmer for 2 minutes or until it’s thickened.
To help keep the recipe light I limited the amount of oil I used. It was still enough to get the flour nice and crispy.

You can keep the Chicken Fried Steak low in points by serving with a zero point side. Peas and green beans go great with this dish.

- 1 lb. cube steak, cut into 4 pieces
- 1 tablespoon extra virgin olive oil
- 2 eggs
- 1/2 cup all purpose flour
- 1 1/2 cups skim milk
- 1 tablespoon cornstarch
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Preheat a large skillet over medium heat.

Add the eggs to a bowl and whisk together. In a separate bowl add the flour, garlic powder, onion powder, salt and pepper. Whisk together.

Dredge one cube steak in the flour, then the eggs, then back in the flour. Repeat with remaining cube steaks.

Add the olive oil to the skillet. Once it's hot add the cube steaks. Cook 3-4 minutes on each side. Remove cube steaks from the pan.

Remove most of the grease from the skillet. Add the skim milk.

In a small bowl add the cornstarch with a couple tablespoons of water and mix together. Slowly pour the cornstarch into the milk while whisking. Add a pinch of salt and pepper.

Let the gravy simmer for 2 minutes or until it's thickened.
