Garlic Chicken Orzo is an easy one-pot meal!
It’s ready in just 30 minutes, and you only have one pan to clean.
Use either a rotisserie chicken from the store or leftover cooked chicken to make it even easier.

How to make Garlic Chicken Orzo:
Start by chopping 1/2 of a small onion. In a large skillet melt 1 teaspoon of light butter.
Add the onion and let it cook for 3 minutes. Add the minced garlic and cook for 30 seconds.
Pour the orzo into the skillet and stir for 2 minutes. Stir in the chicken broth and milk.
Turn the heat to medium-high and let mixture come to a simmer. I cooked the orzo 1 minute less than the directions on the box called for.
Once the time was up I added the spinach and chicken. Let that cook until the spinach wilts.
The final step was to add the Parmesan cheese, salt and pepper.
It’s such an easy meal!
I served mine with a low point side salad.
It was a filling and delicious dinner.


Yield: 4 servings (about 1 cup per serving)

- 1 teaspoon light butter
- 1/2 small onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked orzo
- 2 cups chicken broth
- 1/4 cup skim milk
- 2 boneless, skinless chicken breasts, cooked and shredded
- 2 cups baby spinach
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste

Melt the butter in a large skillet. Add the onion and cook for 3 minutes. Add the garlic and cook for 30 more seconds.

Pour in the orzo, and stir for two minutes. Add in the chicken broth and skim milk.

Turn the heat to medium-high and bring to a simmer. Cook for 8 minutes, stirring occasionally.

Stir in the spinach and chicken. Let cook until the spinach is wilted.

Stir in the Parmesan cheese, salt and pepper.
