This Southwest Chicken Orzo is an easy weeknight meal! Ready in under 30 minutes.
It’s only 6 points per serving for blue and purple, 8 points per serving for green. And they’re large servings! Roughly 2 cups per serving.
The main ingredients in this dish that adds points is the orzo and the cheese.
I follow blue so everything else is 0 points. For green the chicken and corn adds one extra point per serving.

I love cilantro, so I added fresh cilantro at the end. This also tastes great with a little sour cream. If you use sour cream make sure you add any additional points.
This recipe is one you’ll want to make again! I’ve also added black beans to it in the past, but I was out of those today.
Another reason I like this recipe so much is because I usually always have the ingredients on hand to make it.
Southwest Chicken Orzo is made in one pan so it also makes for easy clean up!

- 1 lb. boneless, skinless chicken breast
- 1/2 yellow onion, chopped
- 1 clove garlic, minced
- 2 teaspoons taco seasoning
- 14.5 oz. fat free chicken broth
- 1 cup fat free salsa
- 6 oz. uncooked orzo
- 1 cup reduced-fat Mexican cheese, shredded
- 1 cup corn
- Salt and pepper, to taste

Cut the chicken into bite size pieces and season with salt and pepper. Cook in a large non-stick pan.

When chicken is almost done cooking push it to the side and add the onions. Let the onions cook for a couple minutes then add the garlic. Cook for 30 seconds.

Add the taco seasoning to the chicken and stir. Add the chicken broth and salsa, then stir in the orzo. Bring to a simmer, cover with lid and let it simmer for 10 minutes, stirring occasionally.

Stir in the Mexican cheese and corn. Optional: top with cilantro.

Great recipe! I converted it to make in the instant pot by sauteing the chicken in taco seasoning first. I set it aside to add back at the end. I then placed the remaining ingredients plus the corn but minus the cheese in the pot for 5 minutes and allowing a natural release. Then added cheese to some but left out cheese for those who can’t eat it. Both ways are amazing!
