Garlic Chicken Orzo

Ingredients

  • 1 teaspoon light butter
  • 1/2 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1/4 cup skim milk
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 2 cups baby spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • Melt the butter in a large skillet. Add the onion and cook for 3 minutes. Add the garlic and cook for 30 more seconds.
  • Pour in the orzo, and stir for two minutes. Add in the chicken broth and skim milk.
  • Turn the heat to medium-high and bring to a simmer. Cook for 8 minutes, stirring occasionally.
  • Stir in the spinach and chicken. Let cook until the spinach is wilted.
  • Stir in the Parmesan cheese, salt and pepper.
