These delicious hand pies are similar to a Hot Pocket, but homemade.
They’re filled with broccoli, chicken and cheddar cheese. It’s an easy to make filling.
If you’re short on time you can use a rotisserie chicken or leftover chicken. I used chicken breast to keep it low in points.

How to Make Broccoli, Chicken & Cheddar Hand Pies:
I melted a teaspoon of light butter in a large skillet then added 2 tablespoons of chopped onions. Let the onions cook for 3 minutes on medium heat.
You can use fresh or frozen chopped broccoli. I used frozen because it was easier.
Add the broccoli to the skillet and let that cook a couple minutes.
Next add the chicken, cheddar cheese, garlic powder, salt and black pepper. Stir together and turn off the heat.
On a floured work surface you want to roll out each biscuit into a large circle. Add a heaping tablespoon of filling to the biscuit.
Brush egg wash around the edge of the biscuit to help seal it. Fold the biscuit over and seal the edges. I used a fork to press the edges together.
Place the hand pie on a baking sheet lined with parchment paper. Brush the egg wash over the top of the hand pie.
Bake the pies 10-14 minutes, or until they are golden brown.
I eat my pie as is but my daughter likes to dip hers in ranch dressing. 🙂

- 8 Pillsbury buttermilk biscuits
- 1 teaspoon light butter
- 2 tablespoons chopped yellow onion
- 3/4 cup chopped broccoli (fresh or frozen)
- 1 1/2 cups boneless, skinless chicken breast, cooked and shredded
- 1/2 cup reduced fat sharp cheddar cheese
- 1 egg (plus 1 tablespoon water, whisked together)
- 1/8 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Preheat oven to 375 degrees F.

Melt the butter in a large skillet and sauté the onions for 3 minutes. Add the chopped broccoli and cook 2 minutes. Stir in the chicken, cheese, garlic powder, salt and pepper. Turn off the heat and set aside.

Lightly flour a work surface. Use a rolling pin to roll out the biscuit to 1/8" thickness. Add a heaping tablespoon of the broccoli mixture to the biscuit.

Brush the egg wash along the edge of the biscuit then fold together and seal. Use a fork to press the edges together. Place the pie on a baking sheet lined with parchment paper. Repeat until you have 8 pies.

Bake 10-14 minutes or until the biscuits are golden brown.
