This recipe has all the classic flavor of stuffed peppers and it’s really easy to make!

You can use either lean ground beef or ground turkey. Laura’s lean ground beef is only 12 points for one pound. 93% lean ground turkey is 16 points for one pound.
The ground turkey is about 1 point more per pepper. Be sure to double-check your points based on the meat you use.
How to make Easy Stuffed Peppers:
You need four peppers. Red peppers and green peppers are usually what I use. Today I used one of each color.
Clean the peppers, cut off the top and remove the seeds. If you like softer peppers boil them for 2 minutes then drain.
Spray a baking dish with cooking spray and add the peppers open face up.
I used cooked brown rice for this recipe but you can also use white rice or cauliflower rice. It’s also perfect for leftover rice.
In a large skillet cook the lean ground beef or ground turkey with the onions and garlic. I skipped cooking the onions and garlic in olive oil and just added it to the meat. That helped to save points.
Drain the meat once it’s cooked and add in the cooked rice, tomato sauce, Italian seasoning and Worcestershire sauce. Stir together.
I heat the mixture through before adding it to the peppers.
Divide the mixture into the four peppers.

Next I topped each pepper with a tablespoon of tomato sauce.

Place the stuffed peppers in the oven at 350 for 20 minutes. Remove the peppers and top with part skim mozzarella cheese.
It’s a simple dish that the whole family will love!
I like to serve my Easy Stuffed Peppers with a low point salad. It’s such a filling meal.
I used part skim mozzarella cheese but you can use any low fat cheese you have on hand.

- 4 peppers (red, green, yellow or orange)
- 1 lb. Laura's lean ground beef (96% lean)
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup brown rice, cooked
- 1 1/4 cup tomato sauce, divided
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 3/4 cup part skim mozzarella cheese, shredded

Preheat oven to 350 degrees F.

Wash the peppers, cut the tops off and remove the seeds. If you like a softer pepper add them to boiling water for 2 minutes and drain.

Spray a baking dish with cooking spray and add the peppers open face up.

In a large skillet add the ground beef, onion and garlic. Drain the ground beef once it is cooked through.

Stir in the cooked rice, 1 cup of tomato sauce, Worcestershire sauce, Italian seasoning, salt and pepper. Cook on medium heat for 2 minutes, until the mixture is warmed through.

Evenly divide the meat mixture in the peppers. Top each stuffed pepper with one tablespoon of tomato sauce.

Bake for 20 minutes. Remove, top with cheese then bake 5 minutes, or until the cheese melts.
