Parmesan Cauliflower Steaks are a delicious side dish! They’re low in points too!

Cauliflower has become quite popular over the last few years. I feel like when I was a kid the only time I saw cauliflower was on a veggie tray.
Now it’s used to replace potatoes and rice. Who would have thought!?
One of my favorite Italian dishes is Chicken Parmesan. So I thought why not try it with cauliflower?
I didn’t do the whole breadcrumbs and frying thing, it was more about the Parmesan cheese, marinara sauce and melted mozzarella cheese.
How to make Parmesan Cauliflower Steaks:
Start by removing the outer leaves of the cauliflower. I leave the stem intact because it helps to keep the “steaks” together.
I cut the end off then cut the steaks into 3/4″ slices. I was able to get four steaks out of my head of cauliflower.
In a small bowl I mixed together Italian seasoning, garlic powder, onion powder, salt and pepper.
Spray a baking sheet with nonstick cooking spray or line with parchment paper. Place the cauliflower steaks onto the baking sheet and spray them with olive oil spray.
Top the steaks with the seasoning and put them in the oven for 15 minutes.
Take them out of the oven and flip the cauliflower steaks. Spray with oil again and add the seasoning, then the Parmesan cheese. Top with the sauce and mozzarella cheese then put it back in the oven for 10 minutes or until the cheese melts.
I used the Prego no sugar added traditional sauce. It’s only 1 point for a half cup.
This is a great way to get some extra vegetables into your diet!

Yield: 4 servings

- 1 head cauliflower
- 1/2 cup Prego no sugar added traditional sauce
- 1/2 cup part-skim mozzarella cheese, shredded
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Preheat oven to 400 degrees F.

Remove the outer leaves from the head of cauliflower. Cut the end off then cut into 3/4" steaks.

Spray a baking sheet with no-stick cooking spray then add the cauliflower steaks in a single layer.

In a small bowl mix together the Italian seasoning, garlic powder, onion powder, salt and pepper.

Spray the cauliflower steaks with olive oil then top with the seasoning. Place in the oven for 15 minutes.

Flip the cauliflower steaks then spray with olive oil, add the seasoning and Parmesan cheese. Top with the sauce and mozzarella cheese. Put back in the oven for 10 minutes or until the cheese is melted.
