This Creamy Corn Salad is a delicious side dish that’s perfect for summer!
It’s also low in points. Only 2 points per (1 cup) serving for blue and purple, 5 points for green. The Creamy Corn Salad is a little higher in points for green because corn is not 0 points.
Plus it’s ready in about 15 minutes.

Here’s what you need to make Creamy Corn Salad:
- Corn
- Red pepper
- Red onion
- Parsley or cilantro
- Light mayonnaise
- Fat free sour cream
- Chili powder
- Garlic powder
- Onion powder
- Salt
I think the dressing for the salad is what makes it extra delicious.
To keep it low in points I used light mayonnaise and fat free sour cream. The seasonings help give it a ton of flavor.
You can use either parsley or cilantro. Both taste great. Personally I love cilantro but it seems like a lot of people don’t care for it.
For the pepper I used red but you can use green, orange or yellow. Whatever is your favorite! I like the taste of red peppers plus it gives it a nice pop of color.
I used frozen corn that I let thaw but you could also use cooked corn on the cob.
Making the Creamy Corn Salad is super easy. I started by cutting up the vegetables.
Once that was done I got the dressing ready. I mixed together the mayonnaise, sour cream, chili powder, garlic powder, onion powder and salt.
Put the corn, red pepper, red onion and parsley in a large mixing bowl and stir in the dressing. That’s it! It’s super easy to make.
It tastes great with steak, chicken or fish.

Yield: 8 servings (Each servings is 1 cup, 2 points per serving for blue and purple, 5 points for green)
- 1/2 cup light mayonnaise
- 1/2 cup fat free sour cream
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 2 lbs. corn
- 1 red pepper
- 1/4 red onion
- 1/4 cup parsley or cilantro, chopped
