The sweetness of the mini peppers with the savory taste of the whipped feta make these a delicious appetizer!

I love this appetizer because it can be made ahead of time. I make the whipped feta dip then cover with plastic wrap.
You can also get the mini peppers ready ahead of time. Just cut them in half, remove the seeds and keep them in a zip up bag.
Here’s what you need to make Whipped Feta Stuffed Mini Peppers:
- Mini sweet peppers
- Reduced fat feta cheese
- Fat free sour cream
- Lemon juice
- Garlic clove
- Oregano
- Black pepper
- Green onions
I start by cleaning the mini peppers, cutting them in half and removing the seeds. I set them aside and start getting the whipped feta ready.
Using a mini food processor helps the whipped feta come together perfectly. Just add the feta, sour cream, lemon juice, garlic clove, oregano and pepper to the food processor and grind until smooth.
Once the whipped feta is ready you can start stuffing the peppers. I added a small spoonful of whipped feta to each pepper.
I tried to keep the peppers the same size so there was an even amount of dipped used in each one.
To finish I sliced some green onions and sprinkled them over the peppers.
This recipe gave me 14 stuffed peppers, so 7 peppers that were cut in half. You could get a little more or a little less depending on the size of your sweet peppers.

- 7 mini sweet peppers
- 5 oz. reduced fat feta cheese
- 5 tablespoons fat free sour cream
- 1 teaspoon fresh lemon juice
