Here’s what you need to make Blueberry Ice Cream Sandwiches:
- Graham crackers
- Fat free Cool Whip
- Blueberries
- Sugar free maple syrup
It only takes a few ingredients to make this delicious little treat.
I started by adding the blueberries and syrup to a small saucepan over medium heat.
Let the blueberries cook until they start to break down – about 10 minutes.
Towards the end of the cooking time I used a fork to break down the blueberries, you could also use a potato masher.
Once the blueberries are broken down you can remove it from the heat and let it cool. You want it to be room temperature before adding it to the Cool Whip.
I ended up putting the blueberries in the fridge to cool off.
Add the Cool Whip to a large bowl then add in the blueberry mixture.

You want to fold in the blueberries so the Cool Whip stays nice and fluffy.

It’s ok if it’s not completely combined.
Next add a layer of graham crackers to a 9 inch baking dish and top with the Cool Whip mixture.

Top it off with another layer of graham crackers, cover with plastic wrap then put it in the freezer for at least 2 hours.
This is perfect for a low point dessert! It’s just enough to satisfy a sweet craving.
