This Pumpkin Pudding is delicious and easy to make!

You only need a few ingredients to make this pudding.

I used sugar free vanilla instant pudding mix, fat free skim milk, canned pumpkin and pumpkin pie spice. That’s it!
To make this easy Pumpkin Pudding I started by adding the instant pudding to a large bowl. Then I added 2 1/2 cups of fat free skim milk and whisked it for 2 minutes.
Don’t use the amount of milk it says to use on the box. It says 3 cups but I only used 2 1/2 cups.
After whisking the pudding mixture will start to thicken. Then you can add the pumpkin pie spice and pumpkin.
Whisk the pudding again until everything is combined.
At this point I covered the bowl with plastic wrap and put it back in the fridge for 10 minutes.
The total time it takes to make this pudding is about 5 minutes, it’s that easy.
I calculated this recipe into seven (1/2 cup) servings. You could easily have two servings for very few points.
Pumpkin Pudding tastes great by itself or you could add fat free whipped cream. It basically tastes like pumpkin pie!

Not only does it help me stay on track but it keeps my kids from asking me what is for dinner every day. 🙂

- 1 (1.5 oz. box) Jello instant vanilla pudding mix
- 2 1/2 cups fat free skim milk
- 3/4 cup canned pumpkin
- 2 teaspoons pumpkin pie spice
- fat free whipped cream

In a large bowl add the instant pudding mix and pour in the milk. Whisk it together for two minutes.

Add the pumpkin pie spice and pumpkin, whisk together.

Cover with plastic wrap and refrigerate for 10 minutes.
