Slow Cooker Pepper Steak

This easy crockpot pepper steak recipe will be a hit with your whole family!

Slow cooker recipes are perfect for work days. You can get it ready in the morning, then when you get home your house smells delicious and dinner is waiting for you.

Another great thing about this Pepper Steak is it’s much lower in Weight Watchers points than Chinese takeout.

It’s only 4 Weight Watchers points per serving for the blue plan, green plan and purple plan.

The steak I used for this recipe was lean top sirloin steak, one pound is only 10 points. Since it’s a lean cut of beef it’s not as high in points.

Most of the points in this recipe come from the top sirloin steak. If you want to use a different cut of beef you can, just be sure to change the points. Flank steak or stew meat are other types of beef often used for pepper steak.

Here’s what you need to make Slow Cooker Pepper Steak:

  • Top sirloin steak
  • Onion
  • Green bell pepper
  • Red bell pepper
  • Garlic
  • Soy sauce
  • Water
  • Brown sugar
  • Worcestershire sauce
  • Ginger
  • Cornstarch

Pepper steak is something I grew up eating, my mom used to make it in a pressure cooker. Not a fancy Instant Pot but the old school pressure cooker.

Even though I was super picky as a kid I loved her pepper steak. The only thing was I wouldn’t eat the peppers, only the tender meat and rice.

Times have changed and I will now eat the peppers, in fact I love them. Since the beef spends hours slow cooking I wait until the last hour to add the peppers.

I don’t like mushy peppers. Adding them at the end still adds the delicious flavor from the peppers but keeps them from getting mushy.

To make the Slow Cooker Pepper Steak I started by cutting the steak into 1/2 inch strips. I added the garlic, ginger, soy sauce, water, Worcestershire sauce, brown sugar and onions. I put the lid on the crockpot and cooked it on low for 4 hours.

At the end of the 4 hours I got the cornstarch slurry ready. You simply combine cornstarch and water, I did one tablespoon of each. Mix it together then pour it into the slow cooker and stir.

Add the red and green peppers to the slow cooker. Put the lid back on and cook on high 1 hour.

What should you serve this pepper steak with? If you want to keep it really low in points you can serve it with cauliflower rice.

You could also serve it with white rice, brown rice or even egg noodles.

If you like a little bit of heat you can add red pepper flakes.

To store leftovers you can put them in an airtight container and keep in the fridge for up to 3 days.

Slow Cooker Pepper Steak

Yield: 4 servings (4 points per serving for blue, green and purple)

Ingredients
  • 1 lb. lean top sirloin steak (cut into half inch strips)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger (I used squeeze ginger)
  • 1 tablespoon brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1 teaspoon Worcestershire sauce
  • 1 yellow onion, cut into slices
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 red pepper, cut into strips
  • 1 green pepper, cut into strips
Instructions
  1. Add the steak strips to the slow cooker. Then add the garlic, ginger, brown sugar, soy sauce, water, Worcestershire sauce and onion. Put the lid on and cook on low 4 hours.

  2. Remove the lid and stir in the cornstarch slurry. Add the green and red peppers. Cover with the lid and cook on high 1 hour.

  3. Serve with cauliflower rice, white rice, brown rice or noodles.
