Cheesecake Bites
These Cheesecake Bites are perfect for a quick and easy dessert!
When I say quick I mean QUICK! They only take about 5 minutes to make.
That includes the time to bake the phyllo shells.

The Ingredients
- Mini phyllo shells
- Plain, fat-free Greek yogurt
- Sugar-free cheesecake pudding mix
- Vanilla extract
Optional toppings include fruit (raspberries, blueberries, and strawberries) or mini chocolate chips.
I love using the mini phyllo shells because they’re low in points. They’re small, but perfect for a low point dessert.
Another recipe I used the shells in is my Mini Cannoli.
A regular cannoli could cost you 13 points according to the Weight Watchers app. My Mini Cannoli are only 1 point each.
How to Make Cheesecake Bites
The first thing I did was to get the phyllo shells ready.
The phyllo shells only take 3-5 minutes to bake in the oven. While those were baking I mixed together the yogurt and pudding.
Using sugar-free cheesecake pudding mix and fat-free Greek yogurt helped to keep this recipe low in points. I also added vanilla extract.
Once the phyllo shells were out of the oven, I let them cool, then filled them with the cheesecake mixture.
I topped the Cheesecake Bites with blueberries, raspberries and mini chocolate chips. The mini chocolate chips will add extra points but the fruit won’t.
Strawberries would be a delicious topping too!

Cheesecake Bites

Ingredients
- 1 box mini phyllo shells
- 1 cup fat free plain Greek yogurt
- 1 tablespoon sugar free cheesecake pudding mix
- 1/2 teaspoon vanilla extract
Optional:
- Raspberries, blueberries or strawberries for topping
Instructions
- Bake the mini phyllo shells according to the directions on the box.
- While the shells are baking mix together the yogurt, cheesecake jello mix and vanilla extract.
- Fill the phyllo shells with the cheesecake mixture then top with fresh fruit.
