This Popcorn Shrimp is delicious and there is so much you can do with it!
You can have it for lunch, dinner, a snack, on top of a salad or throw it in some tacos.
Since it’s not fried in oil it’s not high in points. It’s great in the air fryer or baked in the oven.

There are four servings in this popcorn shrimp which is 4 points for blue and purple, 5 points for green.

For the shrimp I bought a 10 oz. bag that was peeled, deveined and tails removed. There were 23 shrimp all together.
It takes just a few basic ingredients to make this popcorn shrimp. You need an egg, all purpose flour and panko breadcrumbs.
I seasoned the flour with Old Bay Seasoning, garlic powder, salt and pepper.
You’ll want to set up three shallow bowls. One with the flour and seasonings, one with the egg whisked and the last one with the panko breadcrumbs.
When I set it up I put my bowls really close to each other to keep from making a mess.
Use a paper towel to make sure the shrimp is dry. You’re going to start by putting the shrimp in the flour so if the shrimp is wet it won’t stick as good.
Dredge the shrimp in the flour, followed by the egg and finally the panko breadcrumbs.
At the end of my dredging station I keep a baking sheet to put the shrimp on until I’m ready to cook them.
Once all of the shrimp were ready I put them in my air fryer in a single layer. You might have to do more than one batch.
Spray them with olive oil cooking spray and cook them for 8-9 minutes.

Once they’re nice and golden they’re ready to eat!
If you are baking them in the oven you can just leave them on the baking sheet. Spray with the olive oil cooking spray and bake in the oven for 15 minutes.
(Side note – I only used 1/4 cup of the 1/2 cup of flour. That is how I calculated the points.)

- 1/2 cup all purpose flour
- 1/2 teaspoon Old Bay Seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg
- 1 cup panko breadcrumbs
- Olive oil cooking spray

Use a paper towel and pat the shrimp dry.

Set up three shallow bowls. In the first bowl add the flour, Old Bay Seasoning, garlic powder, salt and pepper. Mix together. In the second bowl add the egg and whisk it. In the third bowl add the panko breadcrumbs.

Take one shrimp and dredge it in the flour, followed by the egg and then the panko breadcrumbs. Place the shrimp on a baking sheet. Repeat until all of the shrimp are done.

Place the shrimp in the air fryer basket in a single layer. Spray with olive oil spray. Cook at 400 degrees for 8-9 minutes. Flip the shrimp half way through.

Preheat oven to 400 degrees F.

Spray the shrimp with olive oil spray. Bake for 15 minutes.
