These Antipasto Skewers are the perfect appetizer for a party!
They are packed full of flavor and only 1 point each. That’s for blue, green and purple!
Another good thing about these antipasto skewers is they are very easy to make.
This is everything you need:

It is turkey pepperoni, olives, artichoke hearts (in water), roasted red peppers (in water), fresh mozzarella balls and 4″ bamboo skewers.
I also added lite Italian dressing to the cheese balls and artichoke hears. The dressing I used was only 1 point for two tablespoons.
I used 1 tablespoon of dressing for the cheese balls and 1 tablespoon for the artichoke hearts. A little goes a long way.
One way I cut down on points was by cutting the cheese balls in half, and only using one half for each skewer.
Once I had all of my ingredients ready it was time to assemble them. I added the cheese to the skewer, followed by the roasted red pepper, artichoke heart, turkey pepperoni and finally an olive.
Then I kept on going until I had 12 made. This recipe is also easy to double…or triple.

Yield: 12 Antipasto Skewers (1 point each for blue, green and purple)
- 6 fresh mozzarella balls, cut in half (the kind I used were 1 point each)
- Artichoke hearts (I used artichoke hearts in water, you need about 1 cup worth)
- 2 tablespoons lite Italian dressing
- 12 olives
- Roasted red peppers (I used roasted red peppers in water, you need about 1 cup worth)
- 12 slices turkey pepperoni

Begin by cutting each mozzarella ball in half. Place the cheese in a small bowl and add 1 tablespoon lite Italian dressing.

Drain artichoke hearts and add them to a small bowl. Add 1 tablespoon lite Italian dressing and mix together.

Assemble the skewers by adding a piece of cheese, roasted red pepper, artichoke heart, slice of pepperoni and olive. Repeat until you have 12 Antipasto Skewers.
