I love casseroles. They are so filling and tasty. This tater tot casserole is one you will want to eat over and over again. Plus it’s WW (Weight Watchers) friendly.
I made this casserole in an 8×8 pan. It makes 6 servings, 4 Freestyle points per serving.
AND, I used 20 tater tots. That’s a lot of tater tots!
So how did I make this so low in points? To start with I used Campbells Healthy Request Cream of Chicken condensed soup. For 10 1/2 oz. it is only 5 points.

I mixed it with fat-free sour cream. I used a 1/2 cup which was 3 Freestyle points.
The fat-free sour cream is more watery than regular sour cream, but that’s perfect for this recipe.
I bought a rotisserie chicken to make this recipe even easier. I only used the chicken breasts, that way it was zero points.
I also added 1 cup of riced cauliflower. That was also zero points. The riced cauliflower has such a mild taste to it, it’s almost like you’re eating little pieces of potatoes.
I also added seasonings – which were zero points.
This tater tot casserole is perfect for the whole family. They won’t even know it’s Weight Watchers friendly.

Yield: 6 servings, 4 points per serving for blue and purple, 5 points per serving for green
- 10 1/2 oz. Healthy Request Cream of Chicken Condensed Soup
- 1/2 cup fat-free sour cream
- 2 fully cooked boneless, skinless chicken breasts (I used a cooked rotisserie chicken)
- 1 cup riced cauliflower
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon parsley
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup reduced-fat Mexican cheese, shredded (or you can use reduced-fat cheddar cheese)
- 20 frozen tater tots

Preheat oven to 400 degrees F.

In a large mixing bowl add the cream of chicken soup and sour cream. Stir together, then add the chicken, cauliflower, garlic powder, onion powder, parsley, salt and pepper. Mix together.

Spray an 8×8 baking pan with no-stick cooking spray. Add the chicken mixture.

Sprinkle the cheese over the chicken mixture.

Add the tater tots, then bake for 30 minutes. Enjoy!
