One thing I never get tired of is the two ingredient dough. There is so much you can do with it!
It doesn’t have to be just for pizza either. I have made Strawberry Rolls, Italian Stromboli and Fruit Pizza.
I remember the first time I made the two ingredient dough. I made a huge mess!! But it turned out so good I had no choice but to keep making it.
Working with dough is not one of my specialties, but I’m much better at it than I used to be. I feel like each time I make it I get a little better.
Another food I love is salad….but sometimes I want a little more. That’s why I decided to combine two things that I love. This chicken Caesar pizza hit the spot!

I have found a great thing to meal prep is chicken breasts. I will bake a pound of seasoned chicken breasts and use it for salads or recipes. We go through a lot of chicken at my house!
For this pizza I used one of the cooked chicken breasts I had in the fridge. You could also use a rotisserie chicken if you’re trying to save time.
I started this pizza recipe by making the dough. Once I had that rolled out I put it on a baking sheet sprayed with no-stick cooking spray.
The sauce for this pizza is lite Caesar dressing. I brushed on about a tablespoon of the dressing. I used Ken’s Lite Caesar dressing. I used 1/4 cup total for the pizza which was 5 points.

After that I cut up my chicken breast and added it to the dough.

Next I added one cup of part-skim shredded mozzarella cheese.

I baked the pizza for 12 minutes.

While the pizza was baking I got the salad ready. I chopped up 2 cups of lettuce and added the rest of the lite Caesar dressing.
I let the pizza cool off for a couple of minutes then added the lettuce to the pizza. I finished it off by adding 1 tablespoon of grated Parmesan cheese.
This pizza is 5 Freestyle points per serving if you cut the pizza into 6 slices. I had two pieces for dinner, which was 10 points. It’s a little more than what I usually have for dinner, but it was so worth it!

Yield: 6 servings (5 points per serving for blue, green and purple)
- 1 cup fat-free plain Greek yogurt
- 1 cup self-rising flour (It must be self-rising, not all-purpose)
- 1/4 cup lite Caesar dressing, divided
- 1 boneless, skinless chicken breast, cooked and chopped
- 1 cup part-skim mozzarella cheese
- 2 cups lettuce
- 1 tablespoon grated Parmesan cheese

Preheat oven to 450 degrees F.

In a medium size mixing bowl, combine the Greek yogurt and self-rising flour. Mix it together, I used my hands.

Sprinkle flour on your work surface. Add the dough and knead it for about 2 minutes, then roll it out.

Spray a baking sheet with no-stick cooking spray and place the dough on it.

Brush on (about 1 tablespoon) lite Caesar dressing. Next add the chicken and mozzarella cheese.

Bake the pizza 12-14 minutes, or until the cheese is melted and the crust is golden brown.

While the pizza is baking, chop up the lettuce and mix it with the remaining Caesar dressing.

Let pizza cool for a couple minutes then add the lettuce to the pizza. Cut into six slices and serve.
