Chicken Caesar Pizza - Weight Watchers Freestyle

Ingredients

  • 1 cup fat-free plain Greek yogurt
  • 1 cup self-rising flour (It must be self-rising, not all-purpose)
  • 1/4 cup lite Caesar dressing, divided
  • 1 boneless, skinless chicken breast, cooked and chopped
  • 1 cup part-skim mozzarella cheese
  • 2 cups lettuce
  • 1 tablespoon grated Parmesan cheese

Instructions

  • Preheat oven to 450 degrees F.
  • In a medium size mixing bowl, combine the Greek yogurt and self-rising flour. Mix it together, I used my hands.
  • Sprinkle flour on your work surface. Add the dough and knead it for about 2 minutes, then roll it out.
  • Spray a baking sheet with no-stick cooking spray and place the dough on it.
  • Brush on (about 1 tablespoon) lite Caesar dressing. Next add the chicken and mozzarella cheese. 
  • Bake the pizza 12-14 minutes, or until the cheese is melted and the crust is golden brown. 
  • While the pizza is baking, chop up the lettuce and mix it with the remaining Caesar dressing. 
  • Let pizza cool for a couple minutes then add the lettuce to the pizza. Cut into six slices and serve.
