French Onion Baked Chicken (Low Carb and Weight Watchers Friendly)

French Onion Baked Chicken is a delightful twist on the classic French onion soup, turning a beloved starter into a hearty main course.

The sweet, caramelized onions bring a depth of flavor that perfectly complements the tender chicken. By using part-skim mozzarella cheese instead of the usual gruyere, the dish maintains its cheesy goodness while being more calorie-conscious.

This makes it an ideal option for those looking to enjoy a healthy dinner without sacrificing taste.

The Ingredients

Chicken Breasts: Boneless skinless chicken breasts were my protein of choice. They’re 0 points and loaded with protein.

Onions: I used yellow onions since they are sweet and savory.

Cheese: Most French onion soup recipes use Gruyere cheese but to lighten it up I used part-skim mozzarella cheese.

Beef Broth: I used this to keep the caramelized onions from burning. It’s another classic ingredient to French onion soup.

Worcestershire Sauce: This helps to bring out the flavors of the beef and adds another depth of flavor.

Balsamic Vinegar: This gives a bit of tang to the caramelized onions.

Thyme: Another ingredient found in French onion soup. It’s described as having a sharp, minty flavor and adds freshness to savory dishes.

Seasonings: I seasoned the chicken breasts with garlic powder, salt, and black pepper.

How to Make French Onion Baked Chicken

The most important part of the recipe is caramelizing the onions. Start by heating butter in a large nonstick skillet over medium heat. Add the thinly sliced onions and a pinch of salt.

Cook the onions slowly, stirring occasionally to prevent sticking and ensure even cooking. This process should take about 25-30 minutes, allowing the onions to gradually soften and develop a deep golden brown color. Be patient—caramelizing onions is a slow process, but it’s essential for bringing out their natural sweetness.

If the onions become too dry add some beef broth to the pan.

Near the end of the cooking time add the balsamic vinegar, Worcestershire sauce, and thyme. Stir well to combine the ingredients and let them cook for an additional 2-3 minutes.

Season the chicken breasts on both sides with garlic powder, salt, and pepper.

Top the chicken breasts with the caramelized onions. Place one slice of cheese over each chicken breast.

Bake at 400 degrees F for 25 minutes or until the chicken reaches an internal temperature of 165 degrees F.

Once the chicken is cooked place it under the broiler for 1 minute or until the cheese is golden.

Serving Suggestions

Steamed vegetables like broccoli, green beans, or asparagus, will add both color and nutrients to your plate. They’re all great 0 point options.

Whole-grain options such as brown rice, quinoa, or couscous can also complement the dish, providing a wholesome base that absorbs the delicious juices.

A fresh garden salad with a light vinaigrette can provide a crisp, refreshing contrast to the savory chicken.
