Steak Fajita Quesadillas

These Steak Fajita Quesadillas are delicious, filling, and lightened up!

It’s an easy weeknight meal that can feed the whole family.

I made everything in one pan making cleanup easy as well.

The Ingredients

Steak: I went with top sirloin steak since it’s a lean cut. Even though it’s lean it’s still tender and has a good flavor.

Flour Tortillas: To keep it low in points I used Mission Carb Balance flour tortillas. They taste just like regular flour tortillas and they’re only 2 points each.

Regular flour tortillas are 4 points each so that saves 2 points.

Cheese: I used reduced-fat Mexican cheese. It’s lower in points than regular cheese but still melts good.

Bell Peppers: You need two bell peppers for this recipe. I used one red and one green. You can use whatever color is your favorite.

Onion: I used one small yellow onion.

Fajita Seasoning: I made my own fajita seasoning with a combination of chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper.

If you don’t want to make your own fajita seasoning you can use store bought as well.

For each quesadilla I used 2.5 ounces of cooked steak. I used a food scale to make sure the points were accurate.

How to Make Steak Fajita Quesadillas

I started by cutting the bell peppers and onion into thin strips.

Spray a nonstick pan with cooking spray. Heat the pan over medium heat. Once it’s heated at the vegetables.

Cook the vegetables for 10 minutes while occasionally stirring.

While the vegetables cooked I got the seasoning and steak ready.

To a small bowl I added the chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper.

Cut the top sirloin steak into thin strips and add them to a medium mixing bowl. Pour on the seasoning and stir to combine.

Push the vegetables to the side and add the steak. Cook the steak for 1-2 minutes on each side.

Place the steak and vegetables on a plate and wipe out the nonstick pan.

Now it’s time to assemble the quesadillas. I added 2.5 ounces of steak to one side of the quesadilla then topped it with the peppers, onion, and cheese.

Fold the quesadilla in half then add it to the heated pan. Cook for 2-3 minutes or until the tortilla is golden and the cheese is melted.

Serving Suggestions

I served my quesadillas with fat free sour cream and salsa.

You can also top them with cilantro or green onion. It adds a little bit of flavor and color.

Ingredients

  • 2 bell peppers (I used one red and one green), cut into strips
  • 1 yellow onion, cut into strips
  • 1 lb. top sirloin steak
  • 4 Mission Carb Balance flour tortillas
  • 1/2 cup reduced fat Mexican cheese, shredded

For the fajita seasoning:

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Heat a nonstick skillet over medium heat. Spray with nonstick cooking spray and add the bell peppers and onion. Cook the vegetables for 10 minutes.
  • Add the seasoning ingredients to a small bowl and mix together.
  • Cut the steak into thin even strips and add it to a bowl. Add the fajita seasoning and stir to combine.
  • Push the vegetables to the side and add the steak. Cook for 1-2 minutes on each side.
  • Remove the vegetables and steak from the pan. Wipe the pan clean.
  • Assemble the quesadillas by adding 2.5 ounces of steak to half of the tortilla. Top it with the vegetables and 2 tablespoons of cheese. (Repeat until all 4 quesadillas are made.)
  • Spray the pan with cooking spray. Add the filled tortilla and cook for 2-3 minutes or until the tortilla is golden and the cheese is melted.
