Avocado Corn Salsa with Grilled Chicken

This is the perfect warm-weather dinner!

Not only is it delicious, but it’s also low in points. It’s two points for one chicken breast and a large portion of the avocado corn salsa.

The avocado corn salsa is filled with fresh ingredients.

The Ingredients

Chicken breast: Since boneless, skinless chicken breast has zero points, it was the perfect protein to serve with the salsa.

Fish, steak, and shrimp could all be used as a protein. Just be sure to double-check the points.

Avocado: Although avocados have points, they are filled with healthy fats, fiber, and vitamins.

I used a food scale to weigh 4 ounces of avocado, which is 5 points.

Extra virgin olive oil: I limited the oil to two teaspoons, which is 3 points. EVOO has antioxidants, which can help fight inflammation and chronic disease.

Corn on the cob: I wanted the salsa to be made with all fresh ingredients, so I chose corn on the cob.

Red pepper: This helped to add a pop of color, plus red peppers are good for you. They’re high in vitamins and minerals.

Red onion: Both tasty and good for you. They add color and flavor to the salsa.

Lime juice: The lime juice mixed with the EVOO make up the dressing.

Seasonings: Cumin, chili powder, salt, and pepper help to add flavor. I also used fresh garlic cloves instead of garlic powder.

How to Make Avocado Corn Salsa with Grilled Chicken

Boil a pot of water and add the corn on the cob. Cook for 5 minutes, then let the corn cool off.

Once the corn is cool, use a knife to cut the corn off of the cob.

To a mixing bowl, add the corn, avocado, red pepper, red onion, cilantro, minced garlic, EVOO, lime juice, chili powder, salt, and pepper. Gently mix it all together.

Season the chicken breast with your favorite seasonings. I used garlic powder, onion powder, salt, and pepper.

Grill the chicken until it reaches an internal temperature of 165 degrees F. I use a meat thermometer to make sure it’s done.

Each serving includes one chicken breast and 3/4 cup of avocado corn salsa.

  • 1 lb. boneless skinless chicken breast
  • 4 oz. avocado, cut into bite-size pieces
  • 2 medium ears of corn on the cob (cooked and cut off of the cob)
  • 1/2 medium red pepper, chopped
  • 1/3 cup red onion, chopped
  • 1/2 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons extra virgin olive oil
  • Juice of one lime
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Season the chicken breast with your favorite seasonings. I used garlic powder, onion powder, salt, and pepper. Grill the chicken until it reaches an internal temperature of 165 degrees F.
  • Add the avocado, corn, red pepper, red onion, cilantro, minced garlic, EVOO, lime juice, chili powder, cumin, salt, and pepper in a medium mixing bowl. Gently mix everything together.
  • Each serving includes one chicken breast and 3/4 cup of avocado corn salsa.
