Avocado Corn Salsa with Grilled Chicken

Ingredients

  • 1 lb. boneless skinless chicken breast
  • 4 oz. avocado, cut into bite-size pieces
  • 2 medium ears of corn on the cob (cooked and cut off of the cob)
  • 1/2 medium red pepper, chopped
  • 1/3 cup red onion, chopped
  • 1/2 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons extra virgin olive oil
  • Juice of one lime
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Season the chicken breast with your favorite seasonings. I used garlic powder, onion powder, salt, and pepper. Grill the chicken until it reaches an internal temperature of 165 degrees F.
  • Add the avocado, corn, red pepper, red onion, cilantro, minced garlic, EVOO, lime juice, chili powder, cumin, salt, and pepper in a medium mixing bowl. Gently mix everything together.
  • Each serving includes one chicken breast and 3/4 cup of avocado corn salsa.
