Ingredients
1lb.boneless skinless chicken breast
4oz.avocado, cut into bite-size pieces
2mediumears of corn on the cob (cooked and cut off of the cob)
1/2mediumred pepper, chopped
1/3cupred onion, chopped
1/2cupcilantro, chopped
2clovesgarlic, minced
2teaspoonsextra virgin olive oil
Juice of one lime
1/4teaspoonchili powder
1/4teaspooncumin
1/4teaspoonsalt
1/8teaspoonblack pepper
Instructions
Season the chicken breast with your favorite seasonings. I used garlic powder, onion powder, salt, and pepper. Grill the chicken until it reaches an internal temperature of 165 degrees F.
Add the avocado, corn, red pepper, red onion, cilantro, minced garlic, EVOO, lime juice, chili powder, cumin, salt, and pepper in a medium mixing bowl. Gently mix everything together.
Each serving includes one chicken breast and 3/4 cup of avocado corn salsa.
