You’re going to love this light, healthy take on traditional potato pancakes!
All you need is a few simple ingredients to whip up a batch of these scrumptious potato pancakes. Most of the ingredients are ones I always have on hand.

The main thing I did to lighten up these potato pancakes was not frying them in oil. Instead, I used olive oil spray and a nonstick frying pan.

Ingredients for Potato Pancakes
- Russet potatoes (I used 1 large potato that was 12 ounces)
- All-purpose flour
- Egg
- Garlic powder, onion powder, salt, and pepper
- Olive oil spray
I used a food scale to weigh my potato. That way I knew the points were accurate.
I also used a box grater to easily shred the potato.
One difference in the lightened up potato pancakes and fried potato pancakes is they take a little longer to cook. Since they’re not frying in oil it takes a little time to get that nice golden color, about 4 minutes per side.
How to make Lightened Up Potato Pancakes
The first step is to peel and grate the potatoes. You will want to use a cheesecloth or a clean dish towel to squeeze out any excess moisture from the potatoes. Add the potatoes to a large mixing bowl.
In a small bowl, whisk the egg. Add the flour, garlic powder, onion powder, salt, and pepper, then stir together.
Pour the egg mixture into the potato bowl and stir until combined.
Preheat the nonstick frying pan over medium heat and spray with olive oil spray.
Use a 1/4 cup measuring cup to scoop up the potato mixture and add it to the nonstick frying pan. Use the bottom of the measuring cup to flatten the potato.
Let the potato pancakes cook for 4 minutes, then spray the top of the potato pancakes with olive oil spray. Flip them carefully to avoid breaking them.
Cook an additional 4 minutes, or until the potato is golden in color. Remove from the pan and serve warm.
Serving Suggestions
For a classic breakfast option, top your potato pancakes with a dollop of Greek yogurt or sour cream and sprinkle with fresh chives or dill. You can also add a side of smoked salmon or crispy bacon for a delicious twist.
If you’re serving these pancakes as a side dish for dinner, they pair beautifully with a fresh green salad or some sautéed vegetables. The crispiness of the pancakes pairs perfectly with the freshness and crunch of a salad or the savory flavors of grilled vegetables.
