Are you a fan of Taco Bell’s spicy potato tacos? I’ve got good news for you!
You can easily make a similar version of this delicious dish right at home.
Not only will you be able to save some money, but you will also be able to control the WW points and the spice level!

How I lightened it up:
First, I used Mission Carb Balance soft taco shells, They’re only 2 points each and they’re bigger than the shells Taco Bell uses.
Instead of using regular cheese I used reduced-fat shredded cheese. I also limited the amount of cheese I used.
Chipotle sauce usually has mayonnaise in it, but I left out the mayonnaise.
I decided to use fat-free sour cream instead of mayonnaise. That saved a lot of points!

How to make Potato Soft Tacos:
One thing that’s great about this recipe is you can adjust the heat level.
If you’re not a fan of spicy food, you can omit the cayenne pepper. It will bring down the heat.
I used russet potatoes for this recipe. Peel and chop the potatoes into 1/2″ cubes, then rinse them under cold water and pat them dry with a paper towel.
Add the garlic powder, onion powder, paprika, salt, and cayenne pepper to a small bowl. Mix together.
Place the potatoes in a medium bowl and sprinkle on the seasoning. Toss to coat the potatoes.
Heat a large skillet over medium-high heat and add the diced potatoes.
Cook them for about 10-12 minutes or until they are crispy on the outside and soft on the inside.
While the potatoes are cooking you can get the chipotle sauce ready. Add the fat-free sour cream, chipotle peppers in adobo, lime juice, and taco seasoning to a food processor or blender. Run until well combined.
If you have any leftover sauce make sure you store it in the refrigerator in an airtight container.
To assemble the tacos, add 1/4 of the potatoes to a shell. Top with lettuce, cheese, chipotle sauce and any other toppings that you like.
You can add diced tomatoes, guacamole, or sour cream. Just be sure to add any additional points.
These tacos are a great vegetarian option for Taco Bell lovers, and they are super easy to make at home.
You can adjust the spiciness level to your liking by using more or less chipotle sauce and omitting the cayenne pepper.

- 1/8 teaspoon salt

- 1/2 cup fat-free sour cream
- 1 tablespoon chipotle peppers in adobo
- 1 teaspoon taco seasoning
- 1 teaspoon lime juice
- 1/4 cup reduced-fat Mexican cheese, shredded
- Shredded iceberg lettuce
