Roasted Cauliflower with Cheese Sauce is going to be your go-to side dish!
It’s like a loaded baked potato, but with cauliflower.

I love that you can roast the cauliflower in the oven or air fryer.
You can cut the cauliflower into traditional florets or cauliflower steaks. How you cut them will make the cooking time vary.
Roasting Cauliflower in the air fryer:
Cut the cauliflower then add it to the air fryer basket.
Spritz the cauliflower with olive oil spray. I like to season the cauliflower with salt, pepper, and garlic powder.
Air fry the cauliflower at 380 degrees F for 10 minutes, shaking the basket half way through.
If you have cauliflower steaks let them cook 5-10 minutes longer.
Roasting Cauliflower in the oven:
Cut the cauliflower and add it to a baking sheet.
Spritz the cauliflower with olive oil spray, then season.
Bake the cauliflower 10-15 minutes.
If you have cauliflower steaks let them bake 20-25 minutes.
Making the cheese sauce:
Add the butter to a small saucepan. Once it’s melted whisk in the flour.
Slowly whisk in the milk. Make sure there are no clumps of flour.
Once all of the milk is added, stir in the shredded cheese. Add the garlic powder and mix together.
When the cauliflower is done roasting, add it to a bowl and top it with the cheese sauce, bacon, and green onions.

- 1 head cauliflower
- 1/2 teaspoon butter
- 1/2 teaspoon all-purpose flour
- 1/2 cup skim milk
- 1/2 cup reduced-fat Mexican cheese, shredded
- 1 slice center cut bacon, cooked and chopped into small pieces
- 1 medium green onion
- Salt and pepper, to taste
- Pinch of garlic powder
- Olive oil spray

Preheat oven to 425 degrees F.

Remove the stem of the cauliflower and cut it into florets or cauliflower steaks.

Add the cauliflower to a baking sheet and spray with olive oil spray. Season with salt and pepper.

Bake for 10-15 minutes.

While the cauliflower is roasting, make the cheese sauce. Melt the butter in a small saucepan. Whisk in the flour then slowly whisk in the skim milk.

Stir in the garlic powder and cheese until the cheese melts.

Add the cauliflower to a bowl and pour on the cheese sauce. Top it with the bacon pieces and green onion.
