Roasted Cauliflower with Cheese Sauce

Ingredients

  • 1 head cauliflower
  • 1/2 teaspoon butter
  • 1/2 teaspoon all-purpose flour
  • 1/2 cup skim milk
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 1 slice center cut bacon, cooked and chopped into small pieces
  • 1 medium green onion
  • Salt and pepper, to taste
  • Pinch of garlic powder
  • Olive oil spray

Instructions

  • Preheat oven to 425 degrees F.
  • Remove the stem of the cauliflower and cut it into florets or cauliflower steaks.
  • Add the cauliflower to a baking sheet and spray with olive oil spray. Season with salt and pepper.
  • Bake for 10-15 minutes.
  • While the cauliflower is roasting, make the cheese sauce. Melt the butter in a small saucepan. Whisk in the flour then slowly whisk in the skim milk.
  • Stir in the garlic powder and cheese until the cheese melts.
  • Add the cauliflower to a bowl and pour on the cheese sauce. Top it with the bacon pieces and green onion.
