This is a perfect recipe for BBQ chicken lovers!
It’s easy, filling, and delicious!

How I kept this recipe light:
The points in this recipe will depend on what type of bun you use. I couldn’t find a low point bun that looked good so I bought Aunt Millie’s mini sub buns.
Since one bun is 6 points I wanted to lighten it up. Each bun weighs approximately 2.3 ounces.
I removed part of the inside of the bun until it weighed 1.75 ounces. That’s for one whole bun. I used my food scale to make sure it was accurate.
This small change meant that two mini sub buns was 9 points instead of 14.
Of course I stuck with boneless, skinless chicken breast since it’s 0 points.
Instead of using regular BBQ sauce I used sugar free BBQ sauce. I like the G Hughes sugar free BBQ sauce.
I wanted to top the sandwich with cheese, but I didn’t want it to add a lot of points. I bought Sargento ultra thin cheddar cheese which is 4 points for 2 slices.

How to make Easy BBQ Chicken Sandwiches:
I like to get everything ready before I start cooking. I started by slicing the red onion and cutting up the chicken breast.
Measure out the BBQ sauce and set that to the side.
Heat a nonstick skillet over medium heat. Spray with olive oil spray and add the chicken breast.
Season the chicken breast with salt, black pepper, garlic powder, and onion powder.
Cook the chicken until it is just slightly pink, then push it to the side. Add the red onion to the other side of the pan.
Once the onion is softened remove it from the pan. The chicken should be fully cooked now.
Add the BBQ sauce to the chicken and stir together. Let it cook another minute so the BBQ sauce is heated through.
Now it’s time to assemble the sandwich. Add half of the BBQ chicken breast to the bottom part of the sub bun.
Top the chicken with red onions, then a slice of the ultra thin cheddar cheese.
Repeat with the second sandwich.
Place in the oven under the broiler until the cheese melts. It won’t take long since the cheese is thin.
This recipe makes two sandwiches but it can easily be doubled to feed a family.
You can save even more time by using a rotisserie chicken. Simply shred the chicken breast, mix together with the BBQ sauce, then heat through.

- 1/3 cup sugar-free BBQ sauce
- 2 slices Sargento ultra thin mild cheddar cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Cut the chicken into bite-size pieces. Spray the skillet with olive oil spray and add the chicken breast. Season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is slightly pink then push to the side.

Add the sliced red onion to the other side of the pan. Cook until the onions are soft, then remove them from the pan.

Pour the BBQ sauce on the chicken and stir together. Let it cook for another minute so the BBQ sauce is heated through.

Add half of the chicken to the bottom of a sub bun. Top with onions, then one slice of cheese. Repeat with the second sub.

Place under the broiler until the cheese melts, it should only take 1-2 minutes.
