These Roasted Sweet Potatoes are a delicious side dish!
They’re a great alternative to sweet potato casserole, which can be pretty high in points.

Roasting the potatoes makes them crispy on the outside but soft on the inside.
Another good thing about this side dish is it’s inexpensive. I paid $0.99 per pound and only needed 2 lbs.
With food prices so high now I was happy to only pay $2 for a delicious side.
How I kept this recipe low in points:
The main thing I did was to skip the butter.
Instead, I used extra virgin olive oil spray. You can use up to 9 sprays for 0 points.
I also limited the amount of brown sugar I used, two tablespoons was 5 points.
How to make Roasted Sweet Potatoes:
Preheat the oven and line a baking sheet with parchment paper.
Peel the sweet potatoes and cut them into one-inch cubes.

Add the potatoes to the parchment lined baking sheet.

Spray the potatoes with olive oil spray.

In a small bowl mix together the brown sugar, cinnamon, and salt, then sprinkle over the sweet potatoes.

Roast the sweet potatoes for 30 minutes, flipping half way through.

- 2 lbs. sweet potatoes
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- extra virgin olive oil cooking spray

Preheat oven to 400 degrees F. and line a baking sheet with parchment paper.
