I love cheesy potatoes!! No holiday is complete without them.

My old cheesy potato recipe had an insane amount of points. It used a whole stick of butter!!

Just the butter alone is 40 points. I reduced the butter to 2 tablespoons, that was only 10 points.

Here are a few more things I did to lighten up the recipe:

Instead of using regular cream of chicken soup I used Healthy Request.

I used fat-free sour cream instead of regular sour cream.

Instead of regular cheese I used reduced-fat cheese.

I used reduced-fat Ritz crackers instead of regular Ritz crackers.

The last thing I did was used only half of the potatoes, and added riced cauliflower.

Hopefully you didn’t lose interest when I said “riced cauliflower”. It doesn’t give the cheesy potatoes much of a cauliflower taste, it’s more of a filler.

I buy frozen riced cauliflower. It’s so much easier than doing it yourself, in my opinion.

Since riced cauliflower is zero points, it’s a great way to lower points.

It’s also a great replacement for rice. One cup of rice is around 6 points vs. one cup of riced cauliflower for zero points.

I can’t wait to make these cheesy potatoes the next time I have family over. I think they will be surprised that it is a healthy version.

Yield: 12 servings (4 points per serving for blue and green, 3 points per serving for purple)

Ingredients
  • 15 oz. cubed hash browns
  • 1 1/2 cups riced cauliflower (I used frozen)
  • 10 1/2 oz. Healthy Request Cream of Chicken Soup, condensed
  • 2 tablespoons butter, melted
  • 1/2 cup fat-free sour cream
  • 1/2 small onion, chopped
  • 1/8 teaspoon garlic powder
  • 1 cup reduced-fat Mexican cheese, shredded (you can also use reduced-fat mild cheddar cheese)
  • 10 reduced-fat Ritz crackers
Instructions
  1. Preheat oven to 350 degrees F.

  2. Add the cream of chicken soup and sour cream to a large mixing bowl. Stir together.

  3. Add the potatoes, riced cauliflower, butter, onion, garlic powder and cheese. Mix together.

  4. Spray a baking dish with no-stick cooking spray. Add the potato mixture.

  5. Place the Ritz crackers in a zip up bag and use a meat mallet or rolling pin to turn them into crumbs. Sprinkle over the cheesy potatoes.

  6. Bake 35-40 minutes.
