I love foil packet recipes! You can bake them, grill them or cook them over a campfire.
Plus, they’re easy to clean up. I don’t know anyone who wants to spend time cleaning dishes.

A typical shrimp boil is when you boil together sausage, corn, potatoes and shrimp all in a big pot.
Instead of boiling everything, I wrapped it in foil packets.
There was a little bit of boiling involved. To make sure the baby potatoes were cooked I boiled them in water for 10 minutes before cutting them and adding them to the foil packets.
What you need to make Shrimp Boil Foil Packets:
- Uncooked shrimp (peeled and deveined)
- Baby potatoes
- Turkey kielbasa
- Corn on the cob
- Onion
- Old bay seasoning, garlic powder and onion powder
- Parsley
- Lemon
To help keep this recipe low in points I used turkey kielbasa. Six ounces was only 10 points vs. regular kielbasa for 22 points.
How to make Shrimp Boil Foil Packets:
I bought shrimp that was already peeled and deveined. Honestly, it grosses me out if I have to do it myself. 🙂
Boil a pot of water and add the baby potatoes. Let them cook for 10 minutes then drain.
Cut the corn into 1 inch pieces and add it to a large bowl.
Same with the kielbasa, cut it into 1 inch pieces and add it to the corn.
Once the potatoes have cooled cut them into bite-size pieces and add them to the bowl.
Slice the onion very thin and add it to the bowl.
Add the uncooked shrimp to the bowl followed by the Old Bay Seasoning, garlic powder and onion powder. Mix everything together.

You will need four large pieces of aluminum foil. Spray the foil with olive oil spray.
Divide the shrimp mixture into four equal servings and add to the foil. You want to make sure the foil is completely sealed.
With the foil sealed it will keep the steam in the packet to help cook everything.

All that’s left to do now is decide how you want to cook it!
If you’re baking it you will set the oven to 400 degrees and bake for 20 minutes.
To grill the Shrimp Boil Foil Packets you want to turn the heat on high and cook 20 minutes.
Both ways are easy!
When the packets are done cooking carefully open them up. They will be very hot and steamy.
I added some fresh chopped parsley and served with lemon wedges.

- 1 lb. uncooked shrimp (peeled and deveined)
- 6 oz. turkey kielbasa, cut into 1 inch pieces
- 1/2 lb. baby potatoes
- 2 ears of corn, cut into 1 inch pieces
- 1/2 yellow onion, sliced thin
- 1 tablespoon Old Bay Seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon parsley, chopped
- Lemon wedges

Preheat oven to 400 degrees or grill on high.

Bring a small pot of water to a boil. Add potatoes and cook for 10 minutes. Drain and let them cool.

In a large bowl add the shrimp, kielbasa, corn and onion.

Cut the potatoes into bite size pieces and add to the bowl. Add the Old Bay Seasoning, garlic powder and onion powder. Stir everything together.

Cut four large pieces of aluminum foil and spray with olive oil spray. Divide the shrimp mixture into four servings and add to each piece of foil.

Bring the top and bottom pieces of foil together and fold over then fold in the sides. Make sure the foil is completely sealed so the steam doesn't escape.

Bake in the oven or cook on the grill for 20 minutes.
