These Cheesy Baked Tomatoes make a great appetizer or snack!
Recently I was at a surprise birthday party for my brother. They served an appetizer that was similar to this.
The only difference was it was served over some crusty bread.

As much as I love bread, I figured I could lighten this up by leaving it out. Let me tell you, I didn’t even miss it!
I love that with just a few ingredients something can be so delicious.
What you need to make Cheesy Baked Tomatoes:
- Roma tomatoes (3)
- Salt
- Extra virgin olive oil
- Small garlic clove
- Part-skim mozzarella cheese, shredded
- Fresh basil
How to make Cheesy Baked Tomatoes:
The first thing I did was poured the olive oil into a small bowl, minced the garlic clove and added it to the oil.
Using fresh garlic gives these tomatoes so much flavor. It’s just not the same without it.
Set the oil to the side, then clean and slice the tomatoes.
Line a baking sheet with parchment paper and add the sliced tomatoes.

Next, I sprinkled salt over the tomatoes.

Use a pastry brush and brush on the garlic-infused oil.

Top the tomatoes with cheese.

And lastly, the fresh basil.

Bake for 7 minutes, or until the cheese is melted.

You can eat the tomatoes as is or serve them with crusty bread.

Yield: 4 servings (about 3 tomatoes per serving)

- 3 Roma tomatoes
- 1/2 tablespoon extra virgin olive oil
- 1 small garlic clove, minced
- 1/3 cup part-skim mozzarella cheese, shredded
- Fresh basil, chopped
- Salt, to taste

Preheat oven to 400 degrees F.

Add the olive oil to a small bowl and add the minced garlic.

Clean and slice the tomatoes. Line a baking sheet with parchment paper and add the tomato slices.

Sprinkle the tomatoes with salt. Use a pastry brush to brush on the garlic infused oil.

Top the tomatoes with cheese then the fresh basil.

Bake for 7 minutes or until the cheese is melted.
